As we&#8217;ve also noted many, many times before, challenges like these inspire creative thinking. This past Sunday, PBS Newshour dug into <a href=\"http:\/\/www.pbs.org\/newshour\/bb\/environment\/jan-june14\/foodwaste_01-26.html\">the stories of people who&#8217;ve found inspiration in those trash cans and landfills full of rotting food<\/a>, and <a href=\"http:\/\/ecopreneurist.com\/2013\/12\/03\/startup-helps-restaurants-groceries-turn-food-waste-fertilizer\/\">the solutions they&#8217;ve created<\/a> to make more sustainable use of this important resource:<\/p>\n<p><iframe loading=\"lazy\" title=\"Start-ups, organizations take on America&#039;s food waste challenge\" width=\"1170\" height=\"658\" src=\"https:\/\/www.youtube.com\/embed\/Sh3d_Pqr6vM?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; encrypted-media; gyroscope; picture-in-picture\" allowfullscreen><\/iframe><\/p>\n<h3>Food Waste-Inspired Businesses and Organizational Programs<\/h3>\n<p>If you didn&#8217;t jot down the names of the companies and initiatives mentioned in the video, we&#8217;ve got them here for you&#8230; along with a few others we&#8217;ve come across over the years.<\/p>\n<ul>\n<li><strong><a href=\"http:\/\/www.martinsburg.va.gov\/MARTINSBURG\/features\/Fresh_Ideas_in_Action.asp\">Martinsburg VA Medical Center&#8217;s Green Kitchen initiative<\/a>:<\/strong> \u00a0More information on Barbara Hartman&#8217;s effort to reduce waste in the Center&#8217;s kitchen&#8230; which turned out to be a huge money-saver!<\/li>\n<li><a href=\"http:\/\/www.leanpath.com\/\"><strong>LeanPath Automated Food Waste Prevention Tracking System<\/strong><\/a><strong>:<\/strong> The company that helped Hartman measure her organization&#8217;s food waste, and thus manage it.<\/li>\n<li><strong><a href=\"http:\/\/www.nrdc.org\/food\/files\/wasted-food-ip.pdf\">NRDC<\/a>:<\/strong> The environmental organization that&#8217;s done as much as any to put food waste on the environmental agenda.<\/li>\n<li><strong><a href=\"http:\/\/foodcowboy.com\/\">Food Cowboy<\/a>:<\/strong> A mobile application that helps match up large amounts of food that could go to waste with the organizations that can make sure it gets eaten.<\/li>\n<li><strong><a href=\"http:\/\/www.cropmobster.com\/\">Crop Mobster<\/a>:<\/strong> Another technology resource, Crop Mobster uses &#8220;crowd power&#8221; to help bring food producers with excess together with the people and organizations that can \u00a0make use of it.<\/li>\n<li><strong><a href=\"http:\/\/thedailytable.org\/\">Daily Table<\/a>:<\/strong> A new store concept put together by the former president of Trader Joe&#8217;s. Daily Table will sell food that&#8217;s passed &#8220;sell by&#8221; and &#8220;use by&#8221; dates (which are largely meaningless).<\/li>\n<li><strong>Cam Tabb&#8217;s composting operation:<\/strong> I can&#8217;t find a web page for it, but <a href=\"http:\/\/articles.herald-mail.com\/2005-11-28\/news\/25051589_1_yard-waste-bedding-farm\">West Virginia farmer Cam Tabb has been offering composting services for over 20 years now<\/a>&#8230; and has gotten lots of press for his efforts to diversify his revenue stream.<\/li>\n<\/ul>\n<h3>And a few others&#8230;<\/h3>\n<ul>\n<li><strong><a href=\"http:\/\/www.wastefarmers.com\/\">Waste Farmers<\/a>:<\/strong> Started by good buddy John Paul Maxfield, this Denver-based company&#8217;s mission involves not just waste food, but also &#8220;solutions inspired by natural systems, human potential, and intuitive imagination with the intention of enhancing the biosphere, local communities, and one\u2019s authentic life.&#8221;<\/li>\n<li><strong><a href=\"http:\/\/ecoscraps.com\/\">Ecoscraps<\/a>:<\/strong> A Utah-based company collecting food waste, and turning it into &#8220;organic soils and compost.&#8221;<\/li>\n<li><strong><a href=\"http:\/\/www.rubiesintherubble.com\/\">Rubies in the Rubble<\/a>:<\/strong> A UK-based company that makes jams and chutneys from produce that would be otherwise discarded.<\/li>\n<li><strong><a href=\"https:\/\/www.backtotheroots.com\/\">Back to the Roots<\/a>:<\/strong> What can you do with old coffee grounds? How about grow mushrooms?<\/li>\n<\/ul>\n<p>Know of another company or non-profit initiative doing creative things with food that would otherwise go to waste?
